Goat head: one siri
Red chilli powder: 1 spoon
Kashmiri mirch powder:1spoon
Coriander powder:1.5 spoon
Turmeric powder:half spoon
Jaiphal powder(nut meg): 1/4 spoon
Javitri powder(mace):1/4 spoon
Sondh(dried ginger powder):1/2 spoon
Black cumin : half spoon
Cinamon stick: 2 inches stick
Bay leaf: 2 leaves
Citric acid: 1/2 spoon
Gram masala (grind into fine powder
cloves 5
black pepper 10
cumin seed1.5spoon
big cardimon 3
green cardamom 4
carom seed 1/2 spoon
nigella seed 1/2 spoon
PROCEDURE
Heat oil in a pot and put washed and dried goat head pieces and fry till they get little bit golden brown, this will remove their smell. Take out peices in a plate. Now in same oil put ginger garlic paste , yougart , and all spices except bay leaf,black cumin and cinamon. Fry till oil comes out and yogurt water dries, dont burn the masala. Now put fries goat head pieces, whole spices cinamon stick ,bay leaves and black cumin and whole onion. Put 8 glasses of water and let it boil on high flame, once it boils then low the flame and cover the lid. Let it cook ..check in between if head pecies are tender or not . Once nicely cooked and oil comes on top then its done ..garnish with chopped coriander leaves , ginger pieces, green chillies and lemon...eat it with naan or boiled rice
I tried it and it taste so good.... By carom seed u mean ajwain? But u put fennel seeds pic... Under gram masala category whole spices mentioned should be grinded into fine powder .
